Recipe Intro:

Let me start off by saying I am not a great cook, baker, or candlestick maker, 😉 so the dessert recipe I am sharing with you was actually prepared by my fourteen year old niece for one of our big family dinners. This girl can definitely bake because these mini cheesecakes were absolutely delish.

Recipe:

Vanilla mini cheesecakes

Ingredients
1 cup crushed graham crackers
3/4 cup + 2 Tbsp sugar, divided
4 Tbsp melted butter
3 8 oz. packages cream cheese, softened
1 tsp. Vanilla extract
3 eggs, room temperature
1 cup whipping cream (or heavy cream)
1 cup raspberries
1/4 cup confectioners sugar

Directions
1. Preheat oven to 325°F
2. Combine graham cracker crumbs, 2 Tbsp sugar, and 4 Tbsp melted butter. Press onto bottoms of 18 paper- lined muffin cups. Refrigerate until needed.
3. Beat cream cheese, vanilla and remaining sugar with mixer until blended. Add eggs, one at a time, mixing on low speed after each addition just until blended. Do not over blend
4. Spoon batter into crusts.
5. Bake for 30-35 minutes, or until centers are almost set. Cool completely. Refrigerate 2 hours.
6. Beat whipping cream with mixer in medium speed until stiff peaks form. Do not over beat. Add confectioners sugar and mix together with standard whisk.
7. Spread whipping cream onto cheesecakes. Top with raspberries.
8. Enjoy!

Down & Dirty in the kitchen with Lucy Felthouse #DownandDirty #D&D @romancerebels69

Today we have fellow Down & Dirty anthology author, Lucy Felthouse, sharing one of her favorite recipes as well as her story, Good With His Hands!

When Layla is driven to shelter by inclement weather out on a walk, she discovers a sexy park ranger who’s good with his hands.

Blurb:

Layla is enjoying a beautiful moorland walk in the English countryside when suddenly, clouds start to roll in. The weather was forecast to be fine all day, so Layla is woefully unprepared when the heavens open and her visibility is reduced to next to nothing. Trying hard not to panic, she carefully makes her way towards a remote hut she spotted before the fog descended. When she arrives, though, she discovers park ranger Stuart already there, and luckily for her, he’s much more prepared than she is, and they soon find a way to pass the time until the storm blows over.

I am no kind of cook. If I can take something out of the fridge or freezer and put it in the oven or into a saucepan, I’m all good. Otherwise, I’m not interested, LOL. Having said that, though, I can be tempted to “make” some things…

Recipe:

Oreo “bark” (nothing to do with your dog):

Ingredients:

Oreos

Large bar of white chocolate

Method:

Crush the Oreos into small pieces

Melt the white chocolate, then stir in the Oreo pieces

Put the mixture in a flat baking tray of some kind and spread it out so you have a huge flat slab of chocolate/Oreo mix

Allow to cool in the fridge

Eat

This can, of course, be switched up easily to include your favourite types of chocolate and favourite “fillings”, but the combination of the flavours here is amazing.

Recipe Intro

THE LAZY SUNDAY AFTERNOON LAMINGTON

Now, the lamington is a kiwi icon.  An afternoon tea delight that reminds me of lazy Sunday afternoons spent with my family, making these for school lunches, but taste testing a few for quality assurance purposes only — honest!  My Aussie authors in this fabulous boxset might contest and argue that the humble lamington is theirs but trust me… this is all Kiwi!

Recipe:

INGREDIENTS

Sponge Cake

½ cup self-raising flour

½ cup plain flour

½ cup wheaten cornflour

6 extra large eggs, at room temperature

1 cup raw caster sugar or just plain caster sugar

1 Tbsp boiling water

15g butter

4 cups shredded coconut (for rolling pieces in)

Icing:

100g dark chocolate

¾ cup water

2 cups icing sugar, sifted

1 cup cocoa, sifted

½ cup milk

METHOD:

  1. Preheat oven to 190°C conventional or 170°C fan forced. Grease a 30cm x 29cm lamington tin. Line the base and sides with non-stick baking paper, allowing it to overhang slightly.
  2. Sponge cake Sift the combined flours three times into a bowl. Using an electric beater whisk eggs in a large clean, dry bowl until thick and pale. Gradually add raw caster sugar or caster sugar, 1 tablespoon at a time, whisking well after each addition until mixture is thick and sugar dissolves.
  3. Sift the combined flours over the egg mixture. Combine butter and boiling water and pour down the side of the bowl. Use a spatula to gently fold in until just combined.

Pour mixture into the prepared tin. Bake for 20 -25 minutes or until a skewer inserted into the centre comes out clean. Turn cake onto a wire rack to cool. Place in an airtight container. Cake is best made the day before cutting.

  1. To make lamingtons Cut sponge cake into 18 pieces. Put coconut into a wide bowl. Make icing by combining chocolate and water in a heatproof bowl over a saucepan of simmering water. Stir until chocolate has melted and mixture is smooth. Remove from heat.
  2. Sift icing sugar and cocoa over chocolate mixture, stir until smooth. Add milk and mix until well combined. Work quickly as chocolate sauce will thicken on cooling.
  3. Using a large fork, dip sponge cake pieces into chocolate mixture, drain slightly then roll in coconut. Leave to set on a tray.

When Winston Hartwell’s construction crew ends up on a reality TV show, there’s no way he’s going to sing for his supper, no matter how nicely the curvy camera lady asks. He’s terrified of the limelight, and he doesn’t trust these Hollywood types as far as he can throw them.

Recipe Intro:

My mother always told me the way to a man’s heart is through his stomach. My husband would not disagree. So when I started writing my first romance novel, Someone Special, my heroine made an epic first impression with a plate of to-die-for chocolate chip cookies. My readers were up in arms demanding cookies to satisfy their urgent cravings. How could I refuse? I hope you enjoy these cookies as much as they have.

Recipe:

Dani’s Chocolate Chip Cookies
3 cups of flour
1 t baking soda
½ t salt
1 c butter, softened
½ c granulated white sugar
1 c brown sugar, tightly packed
2 t vanilla
2 eggs
1 c semisweet chocolate chips
1 c dark chocolate chips
½ c walnuts (optional)

Directions:
Cream together butter, sugar, and vanilla until pale yellow and fluffy, either with a mixer or a wooden spoon. Add eggs one at a time and mix well. Sift flour, baking soda, and salt together and add to the wet mixture. Mix until well combined. Add chocolates at the end and mix again. Drop heaping teaspoons of dough two inches apart on greased cookie sheets. For larger cookies, use a measured 1/3 cup and flatten a little before baking. Bake at 350 degrees F for 8-10 minutes. If you want them soft, remove them when lightly browned. Let them go a little longer for a crisper finish. Leave them to set on the baking sheet for 1 minute before moving to a cooling rack. Makes 6-7 dozen, depending on size.

Down & Dirty in the kitchen with CR Moss #DownandDirty #D&D @CRMoss @romancerebels69

Today we have fellow Down & Dirty author CR Moss with us to share one of her favorite recipes, along with her story in the anthology, Keep You Safe!

A stalked artist. A sexy wrangler. She’d watched over him once upon a time. Now it’s his turn to keep her safe.

Keep Her Safe Blurb:

I’m Professor Arianna Perez, and I’ve been asked if I’ll ever trust, let alone love, another man again. After dumping an abusive boyfriend, I doubted I would. At least, that’s how I felt until fate had sexy wrangler, Kian Bishop, reappearing in my life in a way I never expected.

Against my better judgement, I fell hard for the cowboy, believing everything he said, including how he wanted to treat me like a queen and keep me safe. Little did I know, though, that the circumstances that’d brought us together could also tear us apart…and possibly claim my life.

Recipe Intro:

I have a thing for potatoes. I have thing for soups, too. Put them together and… Yum! So one day when I was craving some Olive Garden Zuppa Toscana, I started searching the web for a copy cat recipe. I came across this link: https://happyhooligans.ca/zuppa-toscana-olive-garden-knock-recipe/ The recipe looked easy enough, and the author’s claims seemed interesting. I figured I’d give it a go. And, OMG! So good! There was one day that I bought enough items to make a super huge batch, and I ended up having to grab one of my husband’s beer brewing pots to be able to fit the soup in to cook it. Luckily, the five-gallon pot fit on the stove! After we gorged ourselves on the soup, we froze the rest. It’s a nice surprise to find containers of soup out in the garage freezer when you’ve forgotten you have them. LOL! Below is the original recipe from the link I provided above. After the recipe I’ve shared my tweaks to it. Enjoy!

Recipe:

Zuppa Toscana

Ingredients:

1 lb spicy ground sausage (I often just chop up 3 jumbo sausages.  I like the “medium-spicy” ones, but use mild if you’re opposed to heat)

    1 large white onion, diced

    4 slices fried, chopped bacon

    3 cloves garlic, crushed

    9 cups water

    1 cup heavy cream

5 cubes of chicken bouillon (or as much liquid bouillon as you’d need for 9 cups of liquid water)

3 large potatoes, peeled and cubed

    2 cups fresh kale, chopped

To make your soup:

Sauté your sausage in a large pot until it’s cooked through.  Drain the grease, and remove the sausage, and pop it into the refrigerator.  You won’t be needing it for a while.

Leave a little bit of grease in the pot (maybe a tbsp or so).

Now you’re going to fry your bacon in this pot.  You want to use the pot that you just cooked your sausage in because it has all that flavourful sausage goodness in there.

Sauté your bacon until it’s half-way cooked, and then add your onions and garlic, and continue to cook over LOW heat until the bacon is fully cooked and the onions and garlic are soft.

Add a bit of your water to deglaze your pot, and then add the rest of the water and the bouillon, and bring it all to a boil.

Toss in your cubed potatoes, and cook over medium heat until the potatoes are cooked.  This generally takes about a half-hour.

Stir in the cream.

Add your sausage and chopped kale, and heat through.

Serve your amazing Zuppa Toscana with a crusty loaf or my easy bread-machine dinner rolls.

My tweaks that help to save a bit of time…

I use a package of ground hot sausage (example: Johnsonville All Natural Fresh Italian Hot Ground Sausage) and cook it as one would do ground beef. Then I drain all the grease and put the meat aside. The onion is sweet. Bacon… Well, I like bacon, so I usually go overboard with it. I tend to buy the pre-cooked kind that you can microwave in a few seconds (example: HORMEL® BLACK LABEL® Fully Cooked Bacon). This I’ll cut up and throw in the pan, let it cook a bit and then add in the onion. As for the water & chicken bouillon, if salt/sodium is an issue, I found that doing about 4.5 cups of water and 4.5 cups of chicken broth works just as well. These amounts you can play around with as you make batches to see what fits your tastes. Potatoes – I’ve used regular baking potatoes, and I’ve used red potatoes with their skins left on (peeling red potatoes is not fun, IMO). Again, depending upon your tastes you can use what you want. Granted, if you go with red, since they’re usually smaller, I suggest cutting up about six to seven. The kale I use is pre-chopped, bagged organic. After I’ve done most of the prep work and got the soup going, I’ll work on plucking the hard, thick stems from the leaves and just use the leafy bits in the soup.

Down & Dirty in the kitchen with Sarah Marsh #DownandDirty #D&D @romancerebels69

Hi there everyone! My newest anthology project is the Down & Dirty collection, which features 22 original stories all about blue collar heroes and the ladies who appreciate a man who isn’t afraid to get his hands dirty. 😉

My story, Sweet Addiction is about a pastry chef who wins over sexy rancher. I have more than a couple scenes that revolve around the delicious creations she makes, so I thought it would be a fun way to promote this set by having some of my fellow Down & Dirty authors share their favorite recipes with you!

Sasha has what Declan needs to take care of his sweet tooth, and any other hungers …if she can only find the courage to show it.

Sweet Addictions Blurb:

The opportunity to build her own future and start over is exactly what Sasha needs. Moving to the small town of Digby to open up a pastry shop is more than enough to make her happy, or so she thought. What she wasn’t counting on was the sexy rancher that seems to have quite an interest in her, for far more than her baking skills.

Sasha has exactly what Declan needs to take care of his sweet tooth, and any other hungers that may arise…if she has the courage to show it. He’s figured out that Sasha is gun shy when it comes to men, but with some patience, he hopes to sneak past her walls and show her that he’s in it for more than just dessert. When his past comes calling, will Sasha open up and trust him, or will she shut her heart down for good?

Recipe Intro:

I actually used to be a pastry chef and one of my most favorite things to make because its so incredibly versatile is choux paste. For those of who are wondering what the heck choux paste is… this is the dough that cream puffs and eclairs are made of. You can also use it to make so many other things, from desserts to appetisers, it really is one of the building blocks to French pastries.

Recipe:

Choux Paste (Pate a choux)

Yield: 3 cups of raw dough

2 cups fresh eggs (approx 9 large eggs, lightly mixed with a fork)

1 cup water

1 cup milk

1.5 tsp salt

2 tsp sugar (or more if you like)

½ lb butter

2 cups flour

Bring water, milk, butter, sugar and salt to a boil, reduce heat to low. Stir in flour with a wooden spoon until dough starts to come away from the sides of the pot. Transfer dough to a mixer.

Mix dough on med speed until it cools a bit, then slow it down and begin to add the eggs. You want to add the eggs until the dough is smooth, but still firm enough to pipe. If you take off the mixer paddle and flip it over, the dough should hold its peak, but the tip still soft enough to bend back to the paddle. It will usually take almost all the eggs, depending on the humidity and the heat it was cooked at.

Put your dough in a piping bag; if there is still choux left in the bowl be sure to cover it with a wet rag so it does not dry out. Then pipe the required shapes onto parchment for profiterole, éclair, St. Honore, etc. Brush with egg wash before baking and bake at 375 degrees F for the first 10 minutes.

DO NOT OPEN THE OVEN DOOR DURING THE FIRST 10 MINTUES OF BAKING!!

After the first 10 minutes, turn the oven down to 350 degrees F and bake until golden brown and fully cooked.

Remove from oven and cool.

You can then store in a container, freeze or fill  right away.

Filling options:

The sky’s the limit for filling these little bites of paradise, classic things like pastry cream, whipped cream are always delicious. Myself I really love using chocolate mousse, ice cream and even giving them a savory twist for an appetiser by using a ham or chicken mousse as well.

Author Bio:

Sarah Marsh was born in British Columbia, she’s only recently began her writing career finding it the perfect outlet for taking the edge off a nine to five job. She’s a science fiction and romance junkie and when her imagination started to take the characters she’d read about even further in their adventures she decided to try writing something of her own.

Her biggest weaknesses are animals of any kind…she even loves the ones that wake you up at four in the morning because they can almost see the bottom of their food dish. When it comes to life in general she’s a big believer that laughter is the best medicine and that there’s no such thing as too much love, which is why she’s such a sucker for a happy ending.

“Whose idea was it to get an apartment on the third floor of a building with no fucking elevator?” she groaned, holding her head.

“If I recall, you wanted this place because of the rooftop deck. Said you could watch the sunrise whenever you wanted like you were on top of the world.”

“Yes, the roof!” Bristol nodded and clapped her hands excitedly. “Let’s go up there and look at the stars.”

“You need to get some sleep, B,” he protested as she pulled him through the small apartment to the stairway he knew led above.

“I will, but we can look at the stars now, then when you’re gone, I’ll think of you every time I look up at them. I’ll know you’re looking at the same stars, thinking of me.”

Roan knew she probably didn’t intend her words to be so sentimental, but the alcohol was acting like a truth serum, and it shut down her inhibitions. She rarely allowed anyone to see this side of her. Following her up the tiny flight of stairs, he was soon seated on a wooden lounge chair, with her between his legs, her back against his chest, his arms wrapped around her to keep her warm.

“See, there’s my favorite, Ursa Major, the Big Bear,” she pointed upwards.

“Isn’t that the Big Dipper?”

“Yes and no. The Big Dipper is part of the Big Bear, but they’re still two different constellations,” she explained. “My dad taught me that when I was tiny.”

Her voice was wistful when she spoke of her recently deceased father, and Roan hugged her tighter. Having lost his own mother to uterine cancer when he was eleven, he sympathized with her pain.

“Roan, how much longer do you think you can take doing these missions?” she asked randomly.

Stunned silent, he could only shrug behind her.

“You’ve been gone more than you’ve been home. Don’t you get lonely?”

“Sure, every Marine gets lonely occasionally, but I’m one of the lucky ones because I get constant contact. You and my family send me packages, letters, and cards, and I can use FaceTime on some missions, Skype on others. There are plenty of guys over there who don’t have access to any of that.”

“Would you stay if they gave you the option?”

Roan tensed and frowned down at the top of her head, “What do you mean?”

“I don’t know. I just hate when you’re gone. My world seems off-kilter somehow.” She sat up abruptly. “I’m like Lucy with no Ethel.”

“Excuse me?” He felt his eyebrow arch in question. “I am no Ethel. If anyone here is Lucy, it’s me.”

“Nah, Lucy was always instigating trouble, and Ethel just went along with it.”

“Which is exactly why I’m the Lucy in this relationship,” Roan laughed. She shivered, and he tugged her back against him. Instead of resuming their spooned position, she lay sideways against him, her shoulder on his chest, her hands dangerously close to forbidden territory. “If you’re cold, we should go back downstairs.”

“I don’t want to yet. I like having you all to myself,” she sighed and tipped her face up, the pale moonlight barely lighting her face properly. “Have you ever thought about giving it up? The Marines, I mean?”

“Aw, B, of course, it’s crossed my mind. Every man who’s had to watch a friend die or had to kill someone has second-guessed his career choice, but I was born to be a Marine. Giving it up would be like giving up air. My body just wouldn’t work anymore.”

She nodded, “I figured you would say something like that.”

“I always come back.”

IN FAIR BRIGHTON by Elena Kincaid @evernightpub @elenakincaid1

Thank you so much for hosting IN FAIR BRIGHTON (Star-Crossed Mafia #1). I’m so excited for your readers to meet Sasha and Rome, my Romeo and Juliet-esque couple from two rival mob families.

BLURB:
Sasha Palmer, a travel writer, never stays in one
place long enough to find even the possibility of love. The baggage of her
family keeps her closed off from everyone, but one day, love finds her in the
form of strong arms, wrapping around her, and pulling her to safety from
oncoming traffic. One look at Rome, and she’s a goner.
Roman “Rome” Valentin is a killer … and a good one at
that. He leads a life he detests, full of self-loathing until the day he meets
Sasha. She barrels into his life and steals the heart he didn’t know he still
had … and then she vanishes.
Their two families have been at war for decades. Will
a chance meeting and a passionate growing love end the bitter feud or spark a
battle that may destroy them all?

Excerpt:
Sasha found herself pressed against the façade of a bright yellow apartment building. The
street they had been walking down was nearly deserted, when the two of them
suddenly exchanged heated glances. He pushed her up against the building and
kissed her fiercely, one of his hands cradling the back of her head, while the
other was right below her ass as she hitched her leg around him. She threaded
her hand into his hair and fisted the front of his shirt again with her other
hand, moaning into his mouth as the kiss consumed them both, letting out two
days’ worth of fire and heat. She felt his hard length pressing into her,
wanting to take him inside her body and lose herself in him.
He slowed their kiss down. “Do you want me to take you back to your hotel now?” he whispered
against her lips.
“No,” she whispered back. She nipped his bottom lip, driving him to kiss her fervently
again.
He pulled back to look at her, his face riddled with desire. “I ache so badly for you, Sasha.”
“Then have me,” she said. “I want you, too, Rome.”
His hotel was closer to their location, only two blocks away. They walked briskly without a
word until they were inside his room.
“God, what you do to me,” he said, his voice gravelly, right before he cupped her face and
delivered another impassioned kiss.
He removed his hands from her face, and lowered them to cup her ass, pulling her closer to
him. Sasha moaned into his mouth as he hoisted her up to straddle his waist. He
then carried her to the side of the bed in the center of the room and laid her
down on her back so that her bottom was at the edge and her legs dangled off
the side.
He gave her a hungry look, pushed her legs up closer to her before spreading them wide.
“Leave them like that,” he ordered.
She made a low “uh” sound in response, never having been so turned on in her entire life. He
pushed her sundress up to the middle of her stomach and licked his lips as he
stared at her panty-clad swollen flesh. She let out a moan in response.
Using only one finger, he slowly traced the center of her cleft. His breathing was harsh. “I
can feel how wet you are for me even through here.” And just as achingly slow,
he hooked a finger on each side of her underwear by her hip and pulled them off
her, and then spread her legs back open to their previous position.
She felt so vulnerable, yet so turned on with the way he was hungrily staring at her most
intimate part. He dipped his head, and immediately followed the path his finger
had done, only this time with his tongue. Sasha moaned loudly at the contact.
“Even your pussy tastes sweet,” he said against her flesh.
Rome tortured her at first, licking all around her outer and inner lips, avoiding that tight little
bundle of nerves she wanted to beg him to taste until finally, she did beg.
“Please, Rome, please.”
His soft chuckle against her only made her feel needier until he took pity on her and gave her
what she wanted. He sucked her clit into his mouth, making her whimper, and
then he ate her as if she were his most delicious dessert, lips, tongue, teeth,
driving her to the edge quickly.
She screamed, her orgasm hitting her so fiercely, it blurred her vision for a moment. His mouth
did not release her until her body calmed.
“You’re so beautiful when you come,” he said, his voice gravelly.
She gave him a lazy smile when he stood up to remove his shirt. She sat up then, to undo the
button on his jeans while he watched her with his eyes hooded. She bit her bottom
lip as she lowered his zipper, returning the favor by tormenting him with her
slowness. Then, instead of touching him where he wanted, she traced the hard
lines of his six-pack abs, up to his muscular chest, and then she brought them
lower again all the way down to his perfect V. Rome’s body was a work of art.
Michelangelo’s David came to mind.
Deciding she couldn’t wait any longer to taste him,
she freed his hard cock, thick, long, and cut. He was beautiful. He shucked his
pants all the way down, and as soon as he stepped out of them and came closer
to her, she sucked him into her mouth, taking him as far as she could go.
His moans of enjoyment only urged her on, knowing she was driving him as crazy as he had
her. She licked up and down his shaft a few times before popping him back in,
and concentrating on the head.
“Enough,” he said gruffly, popping himself out of her mouth. “I want to come inside you.”
